Vegetable Cutlets

Here's a recipe for vegetable cutlets:
Ingredients:
- 2 large potatoes, boiled and mashed
- 1 cup mixed vegetables (carrots, peas, beans, corn), finely chopped or grated
- 1 small onion, finely chopped
- 2 green chilies, finely chopped (adjust according to taste)
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala powder
- 1 teaspoon cumin powder
- Salt to taste
- 2 tablespoons chopped coriander leaves
- Bread crumbs for coating
- Oil for frying
Instructions:
1. Heat a tablespoon of oil in a pan and add chopped onions. Sauté until they turn translucent.
2. Add ginger-garlic paste and green chilies. Sauté for a minute.
3. Add chopped or grated mixed vegetables and cook until they are tender.
4. Now add mashed potatoes, turmeric powder, garam masala powder, cumin powder, salt, and chopped coriander leaves. Mix well and cook for another 2-3 minutes. Remove from heat and let the mixture cool down.
5. Once the mixture is cooled, shape it into small patties.
6. Coat each cutlet with breadcrumbs.
7. Heat oil in a pan for frying. Once the oil is hot, carefully place the cutlets in the pan and fry until they turn golden brown on both sides.
8. Remove the cutlets from the pan and place them on a paper towel to drain excess oil.
9. Serve hot with your favorite chutney or sauce.
